“Pulutok” or Bopis Recipe from Pampanga’s Kusina Ni Aling Bevang
Bopis is a multi-layered savoury dish using, yes, pork lungs as main ingredient. In Pampanga where a lot of notable chefs in the Philippines come from, bopis is also called “pulutok” because of the popping or crackling sounds the meat makes while being cooked in the pan. Have a go at this dish, either as a main served with steamed rice or as a satisfying dish to go with your favorite beer.

Recipe Kapampangan Bopis/Pulutok
Ingredients
1 kilo minced pork lungs
1pc onion - chopped
1 clove garlic - minced
1pc carrots(medium size) - diced
1pc red and green bellpepper - chopped
2pcs sili labuyo - chopped
4pcs small chili - chopped
2 cups white vinegar
1 tablespoon fish sauce
Salt and pepper to taste
Procedure

Marinade minced pork lungs into 2-cups vinegar and 1 tablespoon salt. Mix and leave it for an hour.

Sautè onions, garlic, one tbsp of fish sauce, then pour the marinaded pork lungs. Let it boil, stir occasionally, until liquid is mostly absorbed and you can hear the crackling/sizzling sound (reason why bopis is called pulutok in Pampanga)

Add minced carrots, minced red and green bell pepper, and small chili (add more if you want spicier).

Salt and pepper to taste.
Optional: You may add two laurel leaves for aroma.
