Mang Dolf’s Ube Halaya Recipe

Ube or purple yam had become a trademark Filipino dessert and flavour for as long as I can remember. One can find ube flavour in almost every Filipino snack or dessert: ice cream, jam, pandesal, puto, cake, bubble tea, hopia, or even mamon. Most Filipinos love ube for what it is – a root crop as versatile as any imaginable snack and dessert can be!

Ube Halaya Recipe

Ingredients

Ube or purple yam: 1kg

Condensed milk: 3 cans

Evaporated milk: 2 cans

Vanilla: 1 tbsp

Butter: 1/4 cup

Grated cheese: 1/4 cup

Procedures

1.

Peel off ube or purple yam and wash.

2.

Place ube in casserole covered with water.

3.

Boil ube until soft.

4.

Remove ube from casserole and let it cool down.

5.

Grate ube into fine texture.

6.

Mix the grated ube with condensed and evaporated milk.

7.

Transfer the mixture into a wok.

8.

Mix in the grated cheese and butter.

9.

Continue mixing until desired texture.

10.

Remove from heat and scoop into prepared container.

Top with more grated cheese. Serve and enjoy.
